Tradition plated with a chef's care: Puntarella Rossa

In December 2017 Puntarella Rossa listed us among Rome's best traditional trattorie for eating plenty and spending little. According to the press page of our former website, the author praised the plating, close to fine dining, and the balance of flavours, citing a potato, onion and sesame mould. A descendant of that dish is on our menu today: the potato and onion sformatino with cacio e pepe cream.
